FOOD
Lunches on Saturday and Sunday are included in
the registration fee. It has not yet been decided whether the buffet or
plated option will be available. This will depend, in part, on the number
of participants registering for the conference.
Lunch Menus
Saturday, November 15
- Butternut squash and carrot bisque
- Grilled vegetable and shiitake kabobs over Moroccan cous cous with a
macedoine of cucumber, ripe tomato and radish
- Brown sugar and cinnamon braised apples stuffed with dried cherries, figs
and walnuts
Sunday, November 16
- Salad of romaine with ripe tomatoes, imported
olives, red onion and balsamic – Dijon vinaigrette
- Fettuccine with roasted tomatoes, eggplant, zucchini, summer squash and bell
peppers with fresh basil – tomato coulis
- Cherry turnovers
Restaurants
Crystal Mountain features two dining
establishments for breakfast and dinners. Vegetarian and vegan
options are available. On Saturday, a
90 minute evening break will be provided to allow participants to
visit local restaurants.
